Sherry Walnut Vinaigrette

2 Tablespoons sherry wine vinegar
2 teaspoons fresh lemon juice
¾ teaspoon salt
¼ teaspoon fresh ground pepper
6 tablespoons walnut oil
2 tablespoons extra-virgin olive oil
In a medium bowl, mix together the vinegar, lemon juice, salt and pepper. Slowly whisk the walnut oil and olive oil until slightly thickened.
